The Royal Palms is a stunning property nestled in the base of Camelback Mountain in Phoenix. The rustic elegance and familiar atmosphere are renowned for a comfortably romantic ambiance and experience. Whether setting foot on the grounds for a getaway, dining experience, or mixology adventure, one will never be disappointed.
The Mix Up Bar is where farm fresh ingredients meet mixology expertise; creating the “farm to glass” experience sure to quench your thirst for something different. Stepping in to the lounge surrounded by a rich history, rustic wooden acoustics, and gold accents, The Mix Up Bar offers up the comfort and intimacy of very few other places I’ve ever been. We dove in to the menu to explore the varietal of cocktails, ‘mocktails’, and kitchen concoctions only to be surprised by the vast selection. From Happy Hour offerings, to wine by the glass and bottle, appetizers, bites, and a full dinner are all available to you here. The kitchen is shared with the T Cooks restaurant on property, also widely hailed, so we knew there was no worry of disappointment. The low-lit room and cozy nook in the corner including a fireplace and intimate seating were the perfect start to our dining and mixology experience.
The first cocktail we chose was the Italian Paloma; fortaleza reposado tequila, carbon antica, aperol, lime, grapefruit, and basic. And for the non-drinker, we also tried a selection from the “Zero Proof” side of the cocktail menu. The Salted Cucumber Rickey; cucumber, fresh lime, salt, and sparkling water. Fresh doesn’t begin to describe the elements of our tasty selections. There was very obviously a great deal of care put in to each drink that makes the experience of drinking them effortless and quenching.
For food, we couldn’t wait to dive in to some mussels and beignets. The Black Spanish Mussels were a no-brainer for us since they included chorizo, garlic, and accompanying crostinis. These were hands-down some of the freshest, largest, and most succulent mussels we’re ever had. The chorizo had the perfect amount of crust and char that complimented the savory broth that accumulated in the bottom of the bowl. The crostinis were certainly necessary in order for us to soak up every last drop of this deliciously fresh treat. The beignets were very possibly made up of my dreams. Not just any beignets, these were Dungeness Crab Beignets! Paired with a spicy tomato remoulade and served in a row, they didn’t last long on our plate. The crab was crisp and clumped the way fresh crab is supposed to be and we ate each bite in hopes we would be able to duplicate this at home. Sadly, I don’t think we will be able to. But we will certainly be back for more!
